We adore wedding cakes but recently noticed a downward trend as couples decided it wasn’t worth having one for their destination wedding.

Many opted out as they couldn’t imagine eating so much food after a full on meal and none of their guests would be able to take cake home.
But you are either a cake girl or you are not! I recall one wedding and had to help our bride load a huge chocolate cake into her car ready for her road trip around Spain eating a slice or two a day! Wedding over, diet done and she was off!
Some decided to have a cake and usually it was served later alongside the ‘midnight snacks.’ Spanish parties go on well into the night so keeping guests sustained with midnight snacks and cake is always a good option.
But as a general rule they seemed to be going out of fashion and replaced with dessert stations and champagne towers.
The Demise & Rise of the Wedding Cake for Destination Weddings
Now wedding cakes are back with a vengeance for destination weddings but embracing the more Mediterranean styles of cakes from the Millefoglie and other equally delicious treats.

We love this idea as due to the heat many traditional wedding cakes don’t hold up well so a tiered fondant covered piped cake has got to be managed with a lot of care to stop it collapsing.
This makes it often impossible to have the cake on show for any length of time and it is usually whipped out the refrigeration about 10 minutes before the cake cutting and god forbid the cake cutting runs over time. I have seen many wedding cakes begin to tip over or just start melting! Think the Leaning Tower of Pisa and you get my drift!
But the cake is back and has become more than a sweet treat, it’s a centrepiece, a photo moment, and a symbol of style.
In Marbella’s luxe yet laid back wedding scene, couples are increasingly swapping traditional fondant covered cakes for something fresher, lighter, and strikingly beautiful.
One of the hottest cake trends this season is the Millefoglie Cake and trust us, it’s the perfect solution and won’t collapse!
What Is a Millefoglie Cake?

Originating in Italy and beloved across Europe, the millefoglie (translating to “a thousand leaves”) is made of layers of crisp puff pastry, piped vanilla cream or chantilly, and often crowned with a generous tumble of seasonal berries. It’s rustic yet elegant, decadent but not too heavy. It’s the perfect cake for a summer wedding in the Mediterranean.
Couples love its “undone perfection,” and we have spotted couples at recent Marbella weddings cutting into their millefoglie surrounded by fireworks, another trend we will be covering soon on the Marbella Wedding Directory!
Why Couples Are Choosing the Flat Cake Trend
They are light and fresh, perfect for warm weather celebrations.
Visually romantic topped with strawberries, raspberries, blueberries and a dusting of powdered sugar.
Interactive as some couples are assembling their cakes and sprinkling the sugar themselves for an extra flourish during the cake-cutting moment. Or the cake is a showpiece put together by the caterers in front of the wedding guests. The photographers are loving these moments!
It is a wonderful cultural nod to the Italian or Mediterranean life to include in their destination weddings.
Other Wedding Cake Trends we are Loving
Fruit-Adorned Minimalism
Simple tiered cakes accented with fresh peaches, figs, grapes, or even lemons feel timeless and fruit and veg sculptures are everywhere this year. Leave the veg and skip to the fruit towers!
Sculpted Cakes
We’re seeing a surge of artful, draped fondant designs that mimic fabric or clouds. Often decorated with fresh flowers or carefully dried petals, these creations are eye catching and very on trend. Draping is big this year so set on a beautifully draped table creates a show stopper.

Elongated cone-shaped cakes are also on trend, piled high and piped with fruit details. I have no idea how they cut them but sure there is a way!
Wedding Cake Tips
If you are having a cake for your wedding don’t forget to bring your cake cutting set or check with your caterer they can provide a cake cutting knife. Small but important details!
Caterers won’t automatically supply a cake table so do make sure this is added to your catering or decor list. Additionally, if you wish to have cake served at your wedding also check the catering bring cake plates and forks. Some venues may charge extra for this.
